This paper begins by exploring the prior research that has shown how eating a plant-based diet can affect the human body. Some of these effects include: improved mood, energy levels, gut health, alkalized urine pH, as well as, lowering the risk of hormonal imbalance, kidney stones, diabetes, cancer, and coronary artery disease. The worries that generally accompany eating a fully vegan diet, which include, malnutrition and protein deficiency, are also addressed in the background research. Many individuals are not following healthy lifestyles as evidenced by the high obesity rates and poor physical activity levels. Many do not know how to eat healthy and exercise effectively, especially given busy schedules and no time to cook or go to the gym. However, people do spend a significant amount of time on their mobile device using social media. The intention of this thesis is to create a cookbook to best serve the needs of all who attend Lions Camp Tatiyee. The cookbook was used as a resource in providing the Lions Camp Tatiyee Kitchen staff with simple, healthy recipes to use in the implementation of their summer menu. This thesis discusses the culmination of the idea, the process of execution, current research concerning the relationship between nutrition and health concerns related to special needs, and achievements and further advancements of my creative project.

Due to persistent undernutrition in India and the increased demands placed on a woman’s body during childbearing and lactation, the Indian government has implemented a program to provide supplemental nutrition packets to women in rural India. This study examines the factors influencing uptake of nutritional packets by lactating mothers in southern, rural Rajasthan. Women were recruited from 65 villages in Rajasthan, India (n=149, minimum of 2 per village) to evaluate the relationship of nutrition packet uptake and two factors--education levels and distance to the health center. The purpose of this thesis was to create a web series educating college students about cooking and nutrition. Due the students' on-the-go lifestyle and lack of experience in the kitchen, meals are often consumed outside of the house and typically lack the recommended nutrition content for a healthy diet. Dogs’ health and wellbeing is of great importance to their owners. The most common nutritional problem for pet dogs is obesity, with 22-40% of pet dogs being classified as overweight or obese. Cardiovascular disease (CVD) is the primary killer of Americans. As such, alternative means of a dietary approach to preventing or mitigating the development of CVD is clearly needed in addition to the ongoing recommendation for increased consumption of fruits and vegetables. Cardiovascular disease is one of the most deadly outcomes of end stage renal disease. Bioelectrical impedance is a intriguing, yet unproven method of measuring fluid buildup in the heart, and is marketed as a early diagnostic tool for onset of cardiovascular disease. In this study, selenium supplements were given to a cohort of dialysis patients in the Phoenix metro area and their fluid tolerance was measured with thoracic biolectrical impedance. Pet obesity is higher than ever in the United States. According to the Association for Pet Obesity Prevention, 52.5% of dogs and 58.3% of cats were either overweight or obese in 20121. The transition from high school to college is, for many, a drastic change in lifestyle, social networks, and dietary choices. The prevalence of obesity in college students has been steadily increasing. Freshmen weight gains have been associated with a decrease in fruits and vegetables and an increase in unhealthy items such as desserts, alcohol, and late night snacking after dinner. Barrett, the Honors College accepts high performing, academically engaged students and works with them in collaboration with all of the other academic units at Arizona State University. All Barrett students complete a thesis or creative project, supervised and defended in front of a faculty committee. The thesis or creative project allows students to explore an intellectual interest and produce an original piece of scholarly research. The thesis or creative project is a student’s opportunity to explore areas of academic interest with greater intensity than is possible in a single course. It is also an opportunity to engage with professors, nationally recognized in their fields and specifically interested and committed to working with honors students. This work provides tangible evidence of a student’s research, writing and creative skills to graduate schools and/or prospective employers.
